If you live in Temecula, you already know the pattern: a “coming soon” banner goes up, the rumor mill does its thing, and then — sometimes a year later — a kitchen finally opens. This list sticks to places that are serving food or ringing a register, with dates and addresses from local reporting and the businesses themselves. Hours change; check before you go.
On Winchester and at the Promenade

LEGO Store, Promenade Temecula. Riverside County’s first LEGO retail store opened Friday, September 18, 2026, at 40820 Winchester Road, Suite 250 — across from Yard House and Pottery Barn in mall space the company confirmed to Patch. Patch reported a 2,378-square-foot shop and a ribbon-cutting weekend with Make & Take and Insiders promotions. It is open seven days a week. (Patch, Sept. 17, 2026)

Kura Sushi, Winchester Marketplace. The revolving sushi bar held its grand opening April 24, 2026, at 40705 Winchester Road, Suite A104, in the strip with Trader Joe’s across Winchester from the Promenade. Temecula is Kura’s second Inland Empire location after Rancho Cucamonga. (Top of Temecula Insider; kurasushi.com)
Gloopii. The DIY slime and craft stop is listed as open at Promenade Temecula on the brand’s locations page (alongside its Northridge store). The City of Temecula had teased Gloopii alongside LEGO earlier in 2026. Confirm the suite on the mall directory when you visit. (gloopii.com/locations)
South Temecula / Temecula Parkway

Einstein Bros. Bagels. Patch confirmed the shop open February 19, 2026, at 32120 Temecula Parkway, Suite 103 — the south-side bagel gap locals had been complaining about for years. The franchisee told Patch a formal grand opening would follow in March. (Patch, Feb. 19, 2026)
CAVA (opened 2025, still packing them in). Not a 2026 debut, but it is the Vail Ranch Center lunch people still talk about: 31709 Temecula Parkway, in the old Pacific Marine Credit Union building. Soft opening May 1 and grand opening May 2, 2025, with a Feeding America tie-in. (Patch, May 2, 2025)

Not every announcement is a dinner plan. Frida’s Taqueria at Palomar Village and Shake Shack on Ynez Road are real projects with unfinished timelines — see What’s coming in 2027. If a place is still boarded up, believe the plywood, not the Instagram “soon.”
